Hi, I want to add a few gameplay changes to a new world, but I do not want a giant modpack. Is there a comfortable way to browse individual mods by category or version?

Hello! I would keep it simple and browse individual mods first, then build your own small setup. Minecraft Catalog https://minecraft-catalog.com/mods/ is useful for that because it is focused on Minecraft resources and lets you look through mod pages without committing to a massive pack. I usually pick one utility mod, one exploration mod and maybe one visual improvement, then test them together before adding more. The biggest mistake is downloading ten things at once and not knowing which one caused a crash. A catalog-style site makes the process calmer because you can move through options in a more organized way.

I usually prefer adding a few individual Minecraft mods rather than installing a huge modpack, since it keeps the game closer to vanilla. Filtering by game version and category would make it much easier to find compatible mods without spending ages testing them.
